Pour the buttermilk (or kefir) into a large bowl; add the eggs, beets, cucumber, spring onion and dill. Stir gently to combine.

Serve with boiled potatoes.

4 hard boiled eggs
1 quart buttermilk or kefir
1 pound red beets, peeled and shredded
1 large cucumber - peeled, quartered and sliced
1/4 cup minced spring onion
1 bunch fresh dill, minced
0,5 kg potatoes.
